Grilled Vegetable Platter



I've been very busy all night.


Preparing this amongst others.


Brinjals, baby corn, mushrooms, red/yellow/green capsicums, and zucchini. I had wanted to add carrots and onions but decided against it in the end.

The vegetables were washed, dried and cut into desired sizes. Marinated in olive oil, herbs, garlic and seasoning and panfried. There's something about panfrying vegetables in a hot pan - the flavours intensify even with a simple salt & pepper seasoning, they turn so tasty and sweet.


Here they are just before I started arranging them on a platter.


Garnished with chopped red capsicum.


I have sealed the platter tightly in foil and placed it in the fridge. One down.
