Step by step to panfried brinjals.



I have two single serving bottles of these tiny olive oil and balsamic vinaigrette dressing;



which I poured into a plate. Add chopped garlic, salt & black pepper and a sprinkling of parsley.


Mix thoroughly until all the brinjals are evenly coated with the dressing.



Then panfry in a little olive oil


and arrange in a neat little circle on a plate before serving. This is delicious and very healthy.
