I had some jacket potatoes, sour cream & chives left over from Saturday's dinner. Look at that lovely potato - its skin was slightly burnt to a soft crisp finish and the inside was really tender but had firmed up in the fridge overnight.
So I turned the leftovers into a potato salad.
I added some hard boiled eggs, mayonnaise, bacon bits, black pepper and parsley for flavour and taste.
It was so good but oh - so - fattening.
p.s It's lovely with a can of tuna thrown in as well.
