Thurs, 1st Feb 2007

Last night, I made fish and chips for the children's dinner.
Season some fillets ( I use Dory from BMC) with salt & white pepper. Dredge the fillets in flour, then coat the fillets in a homemade batter.

Fry till golden brown and drain on paper towels.


Kids ate them with mayonnaise. The batter was really super-crunchy! I use the same batter for fried bananas, sweet potatoes, yam, etc. Not the healthiest meal but they loved it!


A big bite.


Made some chips too which didn't turn out too well (I think they needed more time in the oven)but they were very tasty. Simply cut two potatoes into sticks, add garlic, rosemary, salt & pepper and some light herbs to season, and roast in oven (high heat).

Aww since the fish was already deepfried, why not go the whole hog and deepfry those chips too?

Hello Lina - oops, I just posted the recipe, but where did it go? :P Here we go again - 8 tbs self raising flour, 1 tbs cornstarch, half tps baking powder, sifted together. Add water in a slow, steady stream, stirring continously, till you get a smooth thick batter. There will be no lumps if you keep stirring while adding water, and if there are, don't worry, just strain the mixture through a sieve. Good luck. E. p.s. Measurements approximate.
